BOURBON STEAK & THE EIGHTH RULE
San Francisco, CA
Stanton Architecture, in collaboration with AvroKO, transformed the Westin St. Francis historic Powell Street lobby, entrance and mezzanine into Michael Mina’s Bourbon Steak, while converting the former Clock Bar space into the celebrated Bourbon Lounge. Adjacent to the restaurant, a warm-toned speakeasy accessed from Geary Street and operated by Golden State Warrior Steph Curry, adds a discreet, atmospheric destination.
Historic materials, palettes, and proportions inform the design throughout. Non-original materials are removed, later-era doors eliminated, and symmetry is restored, realigning the public spaces with the organizational clarity of the original lobby. In this vein, the bar is organized around a storied pendant clock, reinforcing the guests’ tradition to "meet me under the clock."
These interventions restore vitality to the hotel's public areas while preserving the architectural integrity that has defined the St. Francis for over a century.
